  • 1 pound 450 grams trottole pasta
  • - 2 tablespoons extra-virgin olive oil
  • - 1 medium yellow onion diced
  • - 2 cloves garlic minced
  • - 1 pound Italian sausage mild or spicy, casings removed
  • - 1 can 14.5 ounces diced tomatoes
  • - ½ cup heavy cream
  • - 1 cup baby spinach roughly chopped
  • - ½ cup grated Parmesan cheese
  • - Salt and freshly ground black pepper to taste
  • - Fresh basil leaves torn (optional for garnish)

Preparation Method :
1. Cook the Trottole Pasta :
Bring a large pot of salted water to a boil. Add the trottole pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta cooking water, then drain the pasta and set aside.
2. Create the Flavor Base :
While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until softened, about 3 minutes. Add the garlic and cook another 30 seconds.
3. Add Protein and Tomatoes :
Crumble the Italian sausage into the skillet. Cook, breaking it up with a spoon, until browned and cooked through, about 5–7 minutes. Stir in the diced tomatoes along with their juices. Simmer for an additional 5 minutes to blend flavors.
4. Finish the Sauce :
Lower the heat and stir in the heavy cream and chopped spinach. Allow to wilt and combine, about 2 minutes. Season with salt and pepper.
5. Combine and Serve :
Add the drained trottole pasta to the skillet. Toss everything together, adding reserved pasta water as needed to achieve the desired sauce consistency. Remove from heat, sprinkle with Parmesan, and garnish with fresh basil before serving.
