  • 2 pounds potatoes Russet or Yukon Gold work best
  • 2 medium carrots diced
  • 1 cup beets cooked or canned
  • 3 large eggs hard-boiled
  • ½ cup mayonnaise full-fat preferred
  • 1 tablespoon vinegar white or apple cider
  • 1 small red onion finely chopped
  • ½ cup green peas optional, adds sweetness and color
  • 1 teaspoon mustard optional, for a tangy bite
  • 1 tablespoon olive oil optional, adds depth to dressing
  • Salt & pepper to taste, always season at the end
  • Fresh herbs for garnish, parsley or cilantro recommended
